Sour Cherry Brownies with Salted Butterscotch
Before finding this recipe in the What Katie Ate cookbook, I knew I was feeling chocolate. My first stop was to flip through the Mast Brothers cookbook, but if you've read it, you'll know that the vibe is not summer at all. It's moody, dark, rich, and something I'll definitely be revisiting in the winter (what up chocolate dark and stormy cake). But I wanted to find a way to make chocolate feel fresh and bright like summertime. When I came across Katie's recipe for Sour Cherry Brownies, I knew it would hit the spot!
Hot tip - sour cherries were located in the "England" area of the international foods isle in my grocery store - I have no idea why. I almost had to choose between maraschino and a new game plan when I couldn't find them (thank you kind store clerk). I've never had sour cherries before, but they definitely do make you pucker and give the brownies a sweet sour tang. Coarse chocolate chunks and a chewy butterscotch ribbon added to the texture and I found myself loving these flavor-packed brownies.
