A couple weeks ago I found out that I was dating a man who had never in his life had a kiwi. That's right Zac, I'm calling you out. As a result, I decided to dig out my tart pan this week and introduce him to the sweet bright green wonders of the kiwi fruit. One of my favorite things is seeing the kiwi fruit pattern sliced down the middle. Perfectly organized black seeds, a bright white center, and a stunning green rim. It looks almost fake like it can't possible occur in naturally in the world. I paired the fruits with an almond meal crust and placed them on a blanket of sweetened cream cheese. We tried it while the crust was still warm but it was infinitely better after chilling for several hours. Even if it's not you're first kiwi, this tart is a simple and elegant way to enjoy it!

Kiwi Tart

Ingredients
2 cups almond meal
4 tablespoons butter, melted
3 tablespoons sugar
6oz cream cheese
3 tablespoons sugar
2 tablespoons milk
1 teaspoon freshly grated lemon zest
3/4 teaspoon vanilla extract
4-5 firm kiwi fruits, peeled and sliced (1/4" thick)

Instructions:
1. Preheat oven to 350 degrees and grease a 9" tart pan
2. In a bowl, combine the almond flour, butter, and sugar, until it is able to be compressed into a crust. You may have to mess with the amount of almond flour and butter to achieve this.
3. Press the crust into the tart pan and bake for 15-20 minutes until crust is golden brown. Remove and let cool completely
4. Meanwhile, in another bowl combine cream cheese, sugar, milk, lemon zest, and vanilla until smooth. Set Aside.
5. When crust is cool, spread cream cheese mixture evenly on top of it
6. Place sliced kiwi on top of cream cheese in any pattern. Let chill for at least 1 hour (more is better), Enjoy!
