Chocolate Peppermint Cookies

With SO MANY amazing recipes out there, it’s incredibly rare that I bake something twice, but these chocolate peppermint cookies are too good to have just once. I made them last December, but wasn’t blogging again yet, and by the time I was, spring just didn’t feel like the right time for a peppermint recipe :) So I kept this recipe linked in my bookmarks bar for a full year in anticipation of making them again to share with all of you.

When the weather dropped below 50 degrees and I started breaking out my sweaters, it felt like coziness level had been reached and it was time to revisit these cookies. I love them because they are the perfect amount of chewiness!! It’s almost like a peppermint brownie. I love the dough, warm out of the oven, or chilled from the fridge. Chocolate Peppermint Cookies

Ingredients:

  • 1/2C unsalted butter, softened

  • 1/2C granulated sugar

  • 1/2C light brown sugar

  • 1 large egg

  • 1/2 tsp vanilla extract

  • 1/2 tsp peppermint extract

  • 1/2 tsp salt

  • 1 tsp baking soda

  • 1/2C unsweetened cocoa powder

  • 1C all purpose flour

  • 1/2C semi-sweet chocolate chips, plus extra for topping

  • 3/4C white chocolate peppermint baking chunks, plus extra for topping

Directions:

  1. In a large bowl or stand mixer, beat together butter and sugars until light and fluffy.

  2. Mix in egg, vanilla and peppermint extract. Scrape bowl as needed.

  3. Add salt, baking soda and cocoa powder. Mix until just combined.

  4. Add flour, mixing until streak free and fully combined.

  5. Stir in chocolate chips and white chocolate peppermint chunks by hand. Transfer to a clean bowl or storage container. Chill until firm but manageable, at least several hours or overnight. 

  6. Preheat oven to 350°F. Line a baking sheet with a silicone baking mat or parchment paper. 

  7. Using a medium cookie scoop, scoop and shape dough into smooth balls. Optionally, add extra chocolate chips and white chocolate peppermint chunks to the tops of each ball of dough. 

  8. Bake for 10-12 minutes. Allow cookies to sit on the tray for 2 minutes prior to transferring to a wire rack to cool completely. Store cooled cookies in an airtight container.
